Cooked Easy Quinoa!
1 cup quinoa
1 3/4 cup water
1/3 cup slivered almonds, or pine nuts
1/2 t salt
1 bay leaf
Cinnamon stick, 1" length
1/2 cup dried fruit (cranberries, raisins)
Rinse the quinoa well under running water. Set aside. Lightly toast the nuts in a medium sized pan. Set aside. Add the rinsed quinoa to the pan, roast over a medium heat. Once the grains are dry add the water, salt, bay leaf and cinnamon stick. Bring to the boil, stir well, cover with a lid and reduce to the lowest possible heat. Cook for 15 minutes. Turn off the heat and let the quinoa sit for a further 5 minutes.
Add in the almonds, stir through and serve. Enjoy with cooked green vegetables.
Makes 4 servings.

Breaking Out Through Food
Change of anything in life takes effort. Eating takes extra effort because we eat so frequently and therefore it involves more energy to get out of the rut.
Yes, a rut that we slip into 3 times a day. To make lasting change, we must be willing to break away from the monotony and routinized eating habits and choices of today, and how we value ourselves in this process. True change takes work, discomfort, awkwardness. But why stay where we are at now? Why believe that our experience of "newness" in life is over?
Be the person that is calling out from inside you - step out from the crowd and be YOU!
